Provolone is a semi hard cheese produced in much the same way as mozzarella. It has a thin hard rind which is shiny golden yellow and sometimes waxed. Provolone Piccante aged for more than four months and has a sharper taste. The cheese goes along with full-bodied and aged red wines.
